Pho French Dip with Pho Butter
This Pho French Dip is filled with thinly sliced brisket that's been slowly simmering in pho broth and cheese, then slathered in our homemade pho butter!

Quantities are shown as originally provided.
- 2 French Baguettes
- 1/2 lbs Thinly Sliced Brisket
- 2 cups Pho Broth
- 8 slices Provolone Cheese
- 2 Egg Yolks
- 1/2 cup Fatty Broth (Nuoc Beo)
- 1/2 tsp Salt
- White Onions
- Green Onions
- Cilantro
- Jalapeno

Prepare pho butter by separating two egg yolks and whisking. Slowly drizzle in the fatty broth from pho until fully emulsified. Season with a pinch of salt

To assemble the sandwich, cut the French baguette in half and layer only thinly sliced brisket and provolone cheese on one side of the sandwich. Put the sandwich on a baking tray and put it in the oven. Broil on low until cheese is fully melted.

Slather a generous amount of pho butter on the other half of the sandwich. Garnish with white onions, green onions, cilantro and jalapeños. Serve with a side of pho broth!
