Ingredients

Quantities are shown as originally provided.

  • 1/4 cup chia seeds
  • 1 cup almond milk (or milk of your choice)
  • 1 avocado
  • 3 tablespoons maple syrup or sweetener of choice
  • 1 teaspoon lemon juice
  • 1 tsp vanilla extract
  • 1/4 tsp almond extract
  • pinch of salt

Instructions

  1. 1

Cut the avocado in half and discard the seed, then scoop the avocado into a blender or deep bowl (if using an immersion blender like I did)

  2. 2

Then add in the almond milk, maple syrup, vanilla extract, and almond extract and blend until avocado is broken down and the mixture is smooth.

  3. 3

Add in a pinch of salt and then add in the chia seeds and, using a spatula, stir well so chia seeds are evenly distributed.

  4. 4

Cut the lemon into half and squeeze in a teaspoon or so of lemon juice into the breakfast pudding.

  5. 5

Then mix well, cover, and chill for at least 2 hours so chia seeds absorb the liquid.

  6. 6

Enjoy plain or topped with your favorite fruit!
