Thai Larb Gai (Chicken Lettuce Wraps)
Larb gai is a mouthwatering Thai chicken lettuce wrap made with a juicy chicken and herb filling tossed in a spicy lime dressing.

Ingredients
- 1 lb ground chicken
- 1/2 tsp kosher salt
- 2 shallots (sliced thin)
- 4 green onions (sliced thin)
- 1/2 cup cilantro (chopped)
- 1/4 cup fresh mint
- 1/4 cup Thai basil
- 1 tbsp red chili flakes
- 1 tbsp palm sugar ((or brown sugar))
- 1 tbsp fish sauce
- 4 limes (juiced)
- 3 tbsp Thai sticky rice (raw, uncooked)
- romaine lettuce leaves (for serving)

Prepare and slice the shallots, green onion and cilantro. Pluck the mint and basil leaves and add to veg. Set aside in a bowl.

In a small bowl mix together the dressing ingredients of red chili flakes, palm sugar, fish sauce and lime juice. Stir to dissolve sugar and set aside.

In a dry skillet over medium heat toast the rice until golden brown, about 8 minutes. Grind to a powder in spice grinder or use a mortar and pestle. Set aside.

Over medium heat cook the ground chicken and season with salt. Transfer to a serving bowl and top with ground rice, prepared veg and herbs and pour dressing over. Toss to coat, check seasoning and serve with lettuce leaves.
