- 2 Roma Tomatoes
- 6 Jumbo Eggs
- 1 Small Shallot
- 2 Garlic Cloves
- 1 tbsp Oil
- 1/2 tbsp Chicken Bouillon
- 1 tsp Sugar
- 1/2 tbsp Fish Sauce
- 1/2 tsp Black Pepper
- Green Onion

Prep ingredients by cutting tomatoes into wedges. Finely mince shallots and garlic. Chop green onions

In a mixing bowl, whisk six eggs and season with a splash of fish sauce. Then put aside

To a hot frying pan, add oil, and lightly saute minced shallots and garlic until fragrant

Add tomatoes and saute for 2-3 minutes or until the tomatoes release their juice

Season with chicken bouillon, fish sauce, sugar and black pepper

Add in whisked eggs, and scramble until eggs are cooked to desired doneness

Serve over rice and garnish with green onions
