Oven-Baked Ribs

Ingredients
- 1/2 C dark brown sugar (packed)
- 4 tbsp smoked paprika
- 2+1/2 tbsp ancho chili powder
- 2 tbsp garlic powder
- 1 tbsp onion powder
- 2 tsp kosher salt (to taste)
- 2 tsp black pepper (freshly cracked)
- 2 tsp dry mustard
- 1 tsp cayenne pepper
- 1 tsp ground cumin
- 3-4 lb rack of ribs
- 1/4 C Smoky-Sweet Rib Rub (to taste)
- 2 C BBQ sauce

First things first, remove that pesky membrane from the back of the ribs if it’s still there. Use a knife to loosen it from one end, then grab it with a paper towel for grip and pull it off in one go. Trust me, this step makes a difference!

In a small bowl, whisk together your Sweet-Smoky Rib Rub ingredients until they’re well combined. Get in there with your hands and coat those ribs thoroughly with the rub, patting it into every nook and cranny—even the edges. You want every bite to be flavorful.

Preheat your oven to 275°F and place a rack at the bottom. Tear off a large piece of foil, center your ribs on it, and wrap them up tight. The goal here is to make a snug little foil packet that keeps all the juices in. Fold the sides up and over the ribs, pressing them in tight, and then fold the ends over the top. Make sure everything is sealed!

Place your foil-wrapped ribs meaty-side down on a foil-lined baking sheet (trust me, this will save you some serious cleanup). Pop them in the oven and let them bake on the bottom rack for 3 1/2 to 4 hours. You’ll know they’re done when the aroma fills your kitchen.

Carefully unwrap the ribs. If you’re aiming for fall-off-the-bone ribs, try twisting one of the bones—it should slide right out. If not, wrap them back up and bake for another 45 minutes.

Once the ribs are tender to your liking, set the oven to broil. Brush the meaty side generously with BBQ sauce and broil for 3-4 minutes. Keep an eye on them—you want the sauce caramelized, not burned!
