Honey roasted fig and goat cheese popsicles

- 10 medium-large black mission figs (sliced in half lengthwise)
- 4-1/2 tablespoons honey (divided)
- 2-1/2 ounces soft goat cheese (about ¼ cup)
- 2 cups non-fat plain greek yogurt

Preheat the broiler.

Lay the sliced figs cut side up on a parchment-lined baking sheet. Drizzle 1-1/2 tablespoons of the honey over the figs.

Broil the figs for 8 minutes.

Meanwhile, whisk the goat cheese, remaining 3 tablespoons of honey, and greek yogurt in a medium bowl until completely smooth.

When the figs are done, purée them in a food processor or blender until smooth.

Using a funnel or a measuring cup with a pour spout, fill each popsicle mold just under halfway with the yogurt mixture.

Divide the fig purée among the popsicle molds. Optional: use a chopstick or the back of a fork to swirl the fig a bit with the yogurt.

Top each popsicle mold with yogurt, until almost full.

Place the lid over the mold and insert your popsicle sticks as straight at possible.

Freeze for 4-6 hours, or until frozen solid. For best results, freeze over night.

To help remove your popsicles from the mold, fill a large bowl with warm water and briefly dunk the bottom part of the mold in the bowl.
