Ingredients

  • 3 cups Day Old Rice
  • 1/2 can Spam
  • 2 tbsp Oil
  • 2 Eggs
  • 1/4 Onion
  • 2 stalks Green Onions (White Part Only)
  • 1 tbsp Minced Garlic
  • 1 Carrot
  • 2 tbsp Oyster Sauce
  • 1 tbsp Soy Sauce
  • 1/2 tbsp Fish Sauce
  • 1/2 tsp Black Pepper
  • 1 tbsp Kewpie Mayo
  • Salt to Taste
  • Green Onions (Green Part Only)

    Prep Work:

    Dice the onion, carrot, and Spam. Finely chop up green onions, separating the whites from the greens. Set aside

    Add two whole eggs into a small mixing bowl and season with a pinch of salt. Whisk until combined

  4. 4

    Cook:

    In a large pan over medium-high heat, add a splash of oil and scramble the eggs quickly until just cooked. Remove from the pan and set aside

    In the same pan, add another splash of oil, then add diced onion, the white part of the chopped green onions, minced garlic, spam, and carrots. Sauté and allow the veggies and spam to slightly crisp and caramelize

    Add the cooked day-old rice to the pan, breaking up any large clumps. Stir-fry everything together until the rice is evenly mixed and heated through

    Season with oyster sauce, soy sauce, and fish sauce. Stir well to coat the rice evenly

    Add the scrambled eggs back to the pan, and mix well. Season to taste with black pepper

    Turn off the heat, and stir in Kewpie mayo until fully incorporated

    Serve:

    Move fried rice to a plate or bowl, garnish with the green part of the green onions, and enjoy!
