Shish Tawook (Grilled Chicken Skewers)

- ¾ cup plain Greek yogurt
- 2 lemons ((See Note 2))
- ¼ cup olive oil
- 2 tablespoons tomato paste
- 8 cloves garlic (minced)
- 4 tsp Lebanese 7 Spice ((See Note 3))
- 1 tsp paprika
- 2 lbs boneless skinless chicken (cut into 2-inch chunks (See Note 1))

- shredded lettuce
- warm pita
- Toum (Lebanese Garlic Sauce)

In a large bowl whisk together the yogurt, ¼ cup lemon juice, zest of 1 lemon, olive oil, tomato paste, garlic, all the seasoning and whisk to combine or use immersion blender to puree.

Transfer chicken to the same bowl and toss with spatula, coating the chicken in the marinade. Cover, and marinate in the refrigerator for at least 4 hours or overnight.

Thread the chicken pieces through soaked wooden skewers or metal ones.

If using an outdoor grill, heat to Medium 375-400°F. Clean and lightly oil the grates. Otherwise heat a grill pan and spray with cooking spray if indoors. Grill 4-5 minutes per side until golden brown and slightly charred.

Serve with warm pita, lettuce, tomato and toum (garlic sauce) on the side.
