Restaurant-Quality Chinese Sausage Fried Rice / Com Chien Lap Xuong

- 3 cups Cooked Leftover White Rice
- 2 links Chinese Sausage
- 2 Eggs
- 1/3 cup Frozen Peas and Carrots
- 3 stalks Green Onion
- 1 tbsp Oil
- 1 tbsp Chicken Bouillon
- 1 tsp Salt
- 1 tsp White Pepper
- 1 tsp MSG

Prep:

Cut green onions and separate the whites from the green part

Thinly slice Chinese Sausage into little coins

In a small dish or bowl, combine equal parts salt, white pepper and MSG
- 5
Whisk two whole eggs in a separate mixing bowl and season with a pinch of the seasoning blend. Reserve the rest to season fried rice

To a nonstick skillet on high heat, add a splash of oil. Pour in whisked eggs and scramble quickly, forming small curds. Cook through to about 80% and remove the eggs from the pan

Add sliced Chinese sausage and cook for 2 minutes. Add the white part of the green onion and sauté until fragrant

Reduce the heat to medium, add frozen peas and carrots, and cook for another 2 minutes

Reduce heat to low and add leftover white rice. Using a spatula or wooden spoon, break up clumps of rice

Season with chicken bouillon, and return scrambled eggs back into the pan. Season to taste with seasoning blend, and continue to cook until everything is thoroughly distributed and grains of rice are separated
