Southern Cajun Fried Corn
These Southern Cajun Fried Corn are super easy to make and come together in under 30 minutes. Serve them as a side or as an appetizer.

Ingredients

- 3 cup sweet corn kernels (fresh or frozen)
- 1 tbsp butter (salted or unsalted)
- 1/2 cup chicken stock (use vegetable stock for a vegetarian recipe)
- 2 tsp cajun seasoning
- 1/4 tsp smoked paprika (or to taste)
- 1/4 tsp cayenne pepper powder (or to taste)
- 1/2 tsp salt (or to taste)
- 1/4 tsp freshly ground black pepper (or to taste)
Instructions

Heat butter in a skillet over medium heat.

Once the butter is melted, add chicken stock, cajun seasoning, smoked paprika, and cayenne pepper powder, and mix well.

Add corn kernels, salt, and pepper and mix well.

Reduce the heat to low and cover the skillet with a lid.

Cook for 10-12 minutes until the corn is tender and most of the liquid is absorbed. Stir a few times while cooking.
