Ingredients

- 1 lb Beef, Flank or Eye of Round
- 1 Large Crown Broccoli
- Oil, For Frying
- 1 tsp Baking Soda
- 1 tbsp Cornstarch
- 1/4 tsp MSG
- 1/4 tsp Salt
- 1 tbsp Water
- 1 tbsp Shaoxing Wine
- 1 tbsp Oil
- 2 tbsp Oyster Sauce
- 2 tbsp Soy Sauce
- 1 tbsp Dark Soy Sauce (Optional)
- 2 tbsp Water
- 1/2 tbsp Grated Ginger
- 1 tbsp Grated Garlic
- 1 tbsp Brown Sugar
- 1/4 tsp MSG
- 1 tbsp Shaoxing Wine
- 1 tbsp Cornstarch
- Sesame Oil
- Sesame Seeds

Prep the beef:

Freeze the beef for 30-60 minutes prior to slicing. This will slightly firm up the meat, making it easier to thinly and evenly slice. Thinly slice the eye of round beef against the grain, then set aside in a bowl

Add baking soda, cornstarch, MSG, salt, water, Shaoxing wine, and oil to the sliced beef. Mix well and let it marinate while you prep the rest of the ingredients

Broccoli:

Cut the broccoli crown into bite-sized florets. Blanch in boiling water for 30 seconds until bright green and crisp-tender. Drain and rinse with cold tap water to stop the cooking process. Set in a colander to dry. (It's important to remove as much moisture as possible here, so that the sauce isn't too liquidy later)

Make the Sauce:

In a small bowl, whisk together oyster sauce, soy sauce, water, grated ginger, grated garlic, brown sugar, MSG, Shaoxing wine, and cornstarch. Set aside

Panfry the Beef:

Heat a generous amount of oil in a hot pan or wok. Add the marinated beef in a single layer. Sear until browned and 75% cooked through, about 1-2 minutes. Remove and set aside

Add in the broccoli and stir-fry for 30 seconds. Add the beef back in and then pour in the sauce and bring to a simmer, stirring until it thickens slightly. Add a splash of sesame oil and then toss everything together until well-coated and heated through

Garnish and Serve:
