Ingredients

Quantities are shown as originally provided.

  • For Masala Kaju (Spicy Roasted Cashew Nuts):
  • 2 cups (300 grams)cashew nuts, whole
  • 2 tablespoons melted ghee/oil
  • Salt to taste
  • 1 teaspoon red chili powder (you can also use smoked paprika or cayenne pepper)
  • 1 teaspoon freshly ground black pepper
  • 2 teaspoons chaat masala powder
  • NOTE: Some ingredients can be replaced with their vegan counterparts.

Instructions

    Preheat air fryer air-fryer to 160°C / 325°F.

    In a mixing bowl, add raw cashews, ghee/oil, red chili powder, black pepper, chaat masala powder, and salt.

    Mix well to coat.

    Place seasoned cashew nuts in the air fryer basket in a single layer.

    Air fry for 6 minutes, or until crispy and golden brown.

    Remove the cashew nuts from the basket and transfer them onto a cool plate. Let them cool for 10 minutes.

    Store spicy roasted cashews/masala kaju in an airtight container and enjoy them for up to 2 weeks.

    Preheat oven to 160°C / 325°F. Line a baking/roasting tray with parchment paper or foil paper for easy cleanup.

    Combine all the ingredients together in a bowl.

    Toss well to coat.

    Transfer seasoned cashews to the prepare baking tray and spread them out in a single layer.

    Roast for 15 minutes. Stir in every 5 minutes to prevent them from burning. This way you will get evenly roasted cashew nuts.

    Remove from the oven and let them cool for 10 minutes. Once cooled store them in an airtight container and use it for up to 2 weeks.

    Add cashews, ghee/oil, and spices to a mixing bowl.

    Mix well to combine.

    Transfer them to a microwave-safe container and arrange them in a single layer.

    Microwave them for 3 minutes. Take them out, stir, and microwave for 2 more minutes.
