- 1 tbsp Oil
- Salt and Pepper
- 1/2 cup Soy Sauce
- 1 tbsp Dark Soy Sauce
- 1/2 cup Brown Sugar
- 1/3 cup Coco Rico
- 1 tbsp Minced Garlic
- 1 tbsp Grated Ginger
- 1 tbsp Sesame Oil
- 1 tbsp Cornstarch
- Green Onions
- Sesame Seeds

Prep the Beef:

Cut the chuck roast into large chunks and season generously with salt and pepper. Set the Instant Pot to sauté on high, add the oil, and sear the beef in batches until lightly browned on all sides. Return all the beef to the pot

Make the Sauce:

In a bowl, whisk together soy sauce, dark soy sauce, brown sugar, Coco Rico, minced garlic, grated ginger, sesame oil, and cornstarch until smooth and fully combined

Cook the Soy Braised Beef:

Pour the sauce over the beef. Cover and pressure cook on high for 50 to 60 minutes. Let the pressure naturally release for about 20 minutes. Remove the beef, shred with two forks, then return it to the sauce and stir to coat

Serve a generous portion of the shredded beef and sauce over hot white rice. Garnish with green onions and sesame seeds.
