  • 1 1/2 cups gluten-free peanut butter
  • 1/2 cup butter (melted (dairy-free use Smart Balance or Earth Balance butter))
  • 3 cups powdered sugar
  • 1 tablespoon pumpkin pie spice
  • 1 tablespoon pure vanilla extract
  • gluten-free red and yellow gluten-free food coloring

Instructions

  1. 1

In a large bowl combine peanut butter, melted butter, pumpkin pie spice and vanilla mix until fully combined with your stand up mixer or hand mixer.

  2. 2

Add several drops of the red and yellow food coloring and mix until you get the orange color you want.

  3. 3

Add the powdered sugar and mix until fully combined.

  4. 4

Scoop out a heaping tablespoon of the peanut butter mixture and form into a ball. (I use my cookie scoop.)

  5. 5

Using a toothpick create the dents in the pumpkins.

  6. 6

Inserts a piece of the gluten-free pretzel in the center to be the pumpkin's stem.
