Shark's Fin Melon Soup

- 1/2 shark's fin melon (~ 1.5 kg)
- 1/2 chicken (~ 800 gram)
- 100 gram carrot, cut into 1-inch pieces
- 100 gram corn, cut into 1-inch pieces
- 2 honey dates
- 6 red dates
- 1.2 liter water
- 1 tablespoon goji berries
- 3/4 tablespoon salt, or to taste

Prep melon: With a very sharp knife, remove the skin from the melon. Remove the seeds, and then cut the melon into big chunks.

Prep chicken: Cut the skin and trim the fat from the chicken.

Cook the soup: Add the chicken, carrot, corn, honey dates, red dates, and melon chunks into a soup pot. Add water to the pot, cook until boiling over medium-high heat, and continue boiling for 5 minutes.

Simmer the soup: Reduce the heat to a simmer and cook for another 90 minutes.

Add goji berries: Add goji berries and season the soup with salt. Cook for another 10 minutes.

Serve the soup: Turn off the heat and serve the soup with steamed rice.
