  • 2 tbsp maple syrup (40g)
  • 2 tbsp peanut butter (30g)
  • 1/2 tsp vanilla
  • 1 cup rolled oats (80g)
  • 1/4 cup peanuts, chopped (40g)
  • 1/4 tsp salt
  • 2 tbsp maple syrup (40g)
  • 2 tbsp coconut butter, melted (28g)
  • 1/2 tsp vanilla extract
  • 1 cup puffed quinoa (20g)
  • 1/4 tsp salt
  • 1/3 cup mini chocolate chips (45g)

Instructions

  1. 1

Preheat oven to 325F. Line a baking tray with a silicon baking mat or parchment paper.

  2. 2

Into a medium bowl, combine the maple syrup, peanut butter and vanilla into a bowl, and stir until combined. Add in the rolled oats, chopped peanuts and salt and mix until combined. Spread the peanut butter granola over the lined baking tray.

  3. 3

Into another medium bowl, combine the maple syrup, coconut butter, vanilla and mix until stir. Add in the puffed quinoa and salt and mix until combined. Spread the caramel granola over the lined baking tray and gently mix it with the peanut butter granola. Bake for 25-28 minutes, rotating the tray half way. Once out of the oven, you can either add in the chocolate chips and mix the granola around and let it melt through or wait until fully cooled to keep the chocolate chips whole. Allow it to fully cool before storing or eating.
