Ube Overnight Oats

These overnight oats are quick, easy and perfect for meal-prepping breakfast or snack for the next day. This is flavored with ube, giving the oats a floral, earthy, and nutty taste!

Ingredients

Quantities are shown as originally provided.

  • 1/2 cup whole rolled oats
  • 1/2 cup coconut milk 1(may also use other milks of choice such as cow, almond, rice, or soy)
  • 1/4 cup plain greek yogurt
  • 1 tablespoon honey, to taste (may use white or brown sugar, agave, condensed milk, or maple syrup)
  • 3/4 teaspoon ube extract 2
  • 1-2 tablespoons unsweetened coconut flakes
  • Strawberries, diced
  • Banana, sliced
  • Condensed milk, to taste

Instructions

    In a bowl or mason jar, combine together the oats, coconut milk, greek yogurt, honey, and ube extract. Mix well to combine 3.

    Cover, and let refrigerate for at least 8 hours or overnight to allow the oats to soften and thicken.

    In the meantime, toast your coconut flakes in a small dry pan over medium heat. Toast the flakes, stirring frequently, until the flakes are golden brown in color. Set aside.

    After letting the oats sit, top with the strawberries, bananas, and toasted coconut flakes. Drizzle a generous serving of condensed milk on top, to taste.
