Basmati Butter Pilau (Pilaf) Rice

Quantities are shown as originally provided.

  • 40 g butter
  • 1 large onion (diced)
  • 1 Tbsp chopped garlic
  • 1 cinnamon stick
  • 2 star anise
  • 6 cardamom pods
  • 5 cloves
  • 3 bay leaves
  • 3 cups basmati rice (washed and soaked)
  • 4 ½ cups water
  • 1 tsp salt
  • 1 Tbsp concentrated chicken stock or 1 chicken cube

Instructions

    Wash and soak basmati rice for 30 minutes.

    Melt butter in a hot frying pan.

  3. 3

    Add diced onions and stir fry until lightly browned.

  4. 4

    Add chopped garlic, cinnamon stick, star anise, cardamom pods, cloves and bay leaves.

    Fry spices until fragrant.

    Drain the soaked basmati rice and add to the pan.

  7. 7

    Stir the rice together with the spices briefly.

  8. 8

    Pour the rice into a rice cooker and add water, salt and concentrated chicken stock.

    Mix thoroughly before closing the rice cooker lid.

    Set to “Normal Rice” mode and cook the rice as per normal.

    When the rice is fully cooked, fluff up the rice before serving with your favourite curry dish, like Beef/Chicken Rendang or Mutton Curry which will be featured in my next video.
