  • 500 gram minced beef
  • 2 tablespoons miso paste red or white
  • 1 tablespoon soy sauce
  • 1 tablespoon sake
  • 1 tablespoon mirin
  • 1 tablespoon honey
  • 1 tablespoon vegetable oil
  • 1 clove garlic
  • 1 onion
  • 1 carrot chopped
  • 1 cup mushrooms sliced
  • 1 tablespoon chili paste optional for extra kick
  • 2 spring onions
  • seasame seeds optional for garnish

Instructions

    In a small bowl, mix together the miso paste, soy sauce, sake, mirin, and sugar (or honey). Set aside.

    Heat the oil in a large frying pan over medium-high heat. Add the minced beef and cook, breaking it apart, until browned and cooked through (about 4-5 minutes).

    Add the minced garlic and chopped onion to the pan with the beef. Stir-fry for 1-2 minutes until the onion becomes soft and fragrant.

    Add the grated or finely chopped carrot and sliced mushroom to the beef mixture. Stir-fry for another 3-4 minutes until the vegetables soften.

    Pour the miso sauce and optional chili paste if using over the beef and vegetables. Stir well to coat everything evenly, and cook for another 2 to 3 minutes to let the flavours meld.

    Serve the miso beef stir-fry over steamed rice. Garnish with some of the chopped spring onions, sesame seeds or fried shallots if desired.
