  • 1 cup white peas / safed matar (soaked overnight)
  • 2 cup water
  • ½ tsp salt
  • handful pudina / mint
  • small piece tamarind / imli
  • 1 pod black cardamom
  • ½ tsp pepper
  • ½ tsp cumin / jeera
  • 1 tsp saunf / fennel
  • ½ tsp chaat masala
  • ½ tsp aamchur / dry mango powder
  • 2 tbsp water
  • ¼ tsp salt
  • 3 tsp oil
  • ¼ tsp turmeric / haldi
  • ½ tsp kashmiri red chilli powder / lal mirch powder
  • pinch of hing / asafoetida
  • ¼ tsp cumin powder / jeera powder
  • ½ tsp coriander powder
  • 1 inch ginger (finely chopped)
  • ¼ tsp garam masala
  • ½ tsp chaat masala
  • 2 tbsp onion (finely chopped)
  • 2 tbsp tomato (finely chopped)
  • few coriander leaves (finely chopped)
  • 1 inch ginger (julienne)
  • 1 green chilli (slit)
  • ¼ lemon (wedge)
  • pinch of chaat masala

Instructions

    firstly pressure cook 1 cup white peas, 2 cup water and ½ tsp salt.

    now in a kadai heat 3 tsp oil and saute 1 inch ginger.

    further saute spices.

    additionally add in pressure cooked white peas and mix well.

    mash slightly for desired consistency.

    now add in prepared jaljeera chutney and mix well.

  7. 7

    boil for 5 minutes or more adjusting consistency.

    garnish with onion, tomato, coriander leaves, ginger, green chilli, lemon and chaat masala.

    finally, serve matar kulcha recipe with plain kulcha or naan.
