Crispy Paneer Pakora (Cheese Fritters)
Crispy paneer pakora is a popular fried Indian snack made from paneer cheese fried in a batter spiced with garam masala and chili powder.

Ingredients
Quantities are shown as originally provided.
- 8 oz. paneer cheese
- 1/2 tsp kashmiri chili powder (or chili powder of choice)
- 1/2 tsp garam masala
- 1/2 tsp chaat masala (optional)
- 1/4 tsp kosher salt
- 3 cups vegetable oil (for frying)
- 1 cup besan flour ((See Note 1))
- 3 tbsp rice flour
- 1 tsp fenugreek leaves
- 1/4 tsp turmeric
- 1/4 tsp kashmiri chili powder (or chili powder of choice)
- 1/4 tsp sea salt (or kosher salt)

Add chili powder, garam masala, chaat masala and salt to a mixing bowl; whisk to combine.

Cut pakora into bite size cubes. Transfer to bowl of spices and toss to combine.

Add batter ingredients to a large mixing bowl and whisk to combine. Slowly incorporate 2/3 cup warm water, whisking to form a smooth batter.

Heat cooking oil in a shallow frying pan to 350°F.

Dip each paneer cube into the batter, gently shake off excess, and fry a few at a time until golden brown on all sides. Keep cooked pakoras warm on a tray in the oven.

Serve with pudina chutney, tomato chutney or other dipping sauce of choice.
