Ingredients

Quantities are shown as originally provided.

  • 10-15 small Mackerel
  • 2 carrots, sliced
  • 1 onion, diced
  • 4 cups white vinegar
  • 2 cups water
  • 1/2 cup sugar
  • 10 cloves
  • 2 cinnamon sticks, broken to pieces
  • 12 black peppercorns
  • 2 bay leaves
  • 1 tsp black mustard seeds
  • 1 tsp yellow mustard seeds
  • 5 cardamom pods, lightly crushed
  • 1 cup salt dissolved in 8 cups water

Instructions

    Fillet and de-bone the mackerel, removing major bones.

    Remove clear thin membrane over the mackerel skin.

    Place fish fillets in brine solution for 3 hours or until firm.

    Put all pickling solution ingredients in pan and bring to a boil. Simmer 15 mins. Let cool

    Drain fish of brining solution. Layer fish fillet, carrots and onions in jar.

    Pour the cooled pickling solution into jar until all fish is covered. Cover and refrigerate for two days.
