Ingredients
- Nonstick cooking spray
- 1 cup cottage cheese
- 3 large eggs
- 1 cup (96g) rolled oats
- 1/4 cup milk
- 1/4 cup maple syrup
- 2 tsp ground cinnamon
- 1+2/3 cup frozen berries, divided

Grease a 12-cup muffin tin with nonstick cooking spray.

In a large bowl, combine the cottage cheese, eggs, oats, milk, maple syrup, and cinnamon. Stir in half of the frozen berries. Divide the mixture between the greased muffin tin cups, filling each with about 1/4 cup of batter. Top with remaining berries.

Bake the muffins until the edges are lightly golden and the tops are set, 25 to 27 minutes. Let cool in the tin for 10 minutes, then use a small spatula to remove to a wire rack to cool completely.
