Roasted Red Pepper Dip And Marinade

Ingredients

- 4 red peppers
- 1 red onion (chopped)
- 3 cloves garlic (chopped)
- 1/2 tsp smoked paprika
- 1/2 tsp chili powder ((optional))
- 1/2 tsp salt and pepper (or as needed)

Preheat oven to 400 degrees.

Wash red peppers, place them on a foil lined baking tray and bake for 20 minutes. Then, flip peppers over and bake another 20 minutes. When done, cover with foil and set aside till cool.

While peppers are baking, saute onion and garlic for about 15 minutes, stirring to keep them from burning.

When peppers are cool, remove the stem and skin - they should separate from them easily. Add the flesh of the bell peppers to a food processor or a bowl where you can easily use your immersion blender/hand held mixer, also add in the onions, garlic, smoked paprika, chili, salt and pepper and blend till all ingredients are well incorporated.

Serve with chips and veggies. Or, marinade chicken or fish in this roasted red pepper dip for about 30 minutes before grilling or pan sauteing.
