Chicken Satay Burger
Chicken Satay Burger – Savory marinated chicken satay with spicy peanut sauce, zesty red onion and sliced cool cucumber…in a burger. No skewers required!

Ingredients
Quantities are shown as originally provided.
- 8 pieces boneless skinless chicken thigh
- 4 stalks fresh lemongrass (or 2 tablespoons frozen minced lemongrass)
- 1 teaspoon ground coriander
- 1/2 teaspoon ground cumin
- 1 tablespoon ground turmeric (or 2 cm of fresh turmeric)
- 2 teaspoons galangal powder (or 1 cm of fresh galangal)
- 4 tablespoons of brown sugar
- 1 teaspoon salt
- 4 small shallots
- 3 cloves garlic
- 2 tablespoons soy sauce
- 3 tablespoons cooking oil
- 1/4 cup water
- 8 hamburger buns
- 1 small red onion (sliced thinly)
- 1 cucumber (sliced thinly)
- 1 1/2 cups prepared spicy peanut sauce
Instructions

Thinly slice only the pale portion of the lemongrass. Place in food processor or blender.

Add ground coriander, ground cumin, turmeric, galangal, brown sugar, salt, shallots, garlic, soy sauce, cooking oil and water into the food processor or blender.

Blend until smooth.

Pour marinade over chicken. Gently massage the marinade into the chicken (don't forget to wear disposable gloves!)

Allow the chicken to marinade in the fridge for at least 2 hours, up to overnight.

Grill or pan-fry for about 2 minutes on each side or until fully cooked.

Place grilled satay chicken on the bottom hamburger bun.

Top with sliced red onion and sliced cucumber.

Smear spicy peanut sauce on the top hamburger bun, then place it on the rest of the burger.

Serve with fries, potato chips or shrimp crackers.
