- 2 cups graham cracker crumbs ((about 13 cracker sheets))
- ½ cup unsalted butter (melted)
- 2 tablespoons granulated sugar
- ¼ teaspoon ground cinnamon
- 1 pinch table salt
- 16 ounces cream cheese, (room temperature)
- 1 cup granulated sugar
- ⅓ cup plain Greek yogurt
- 3 large eggs
- 1 tablespoon lime juice
- 1 tablespoon tequila
- 1 teaspoon triple sec
- zest of 1 lime

For the crust

Preheat the oven to 375°F.

In a large bowl, add graham cracker crumbs, butter, sugar, cinnamon and salt. Mix together with a fork and press into the bottom of a 9x9 square baking pan.

Bake for 8 to 10 minutes, until the crust is firm and has set. Remove from the oven and set aside to cool.

For the filling

In a large bowl, add the cream cheese and sugar. Mix together with a mixer until well combined.

Add the Greek yogurt, eggs, lime juice, tequila, triple sec and lime zest. Mix together until well combined.

Pour the filling into the crust and bake for 35 to 40 minutes, until the filling is set. It will be a little jiggly, but firm.

Remove from the oven and set aside for 30 minutes to cool. Refrigerate for 1 hour before serving.
