Fried Egg Banh Mi / Bánh Mì Ốp La
I didn't grow up with American breakfasts like cereal, pancakes, waffles or oatmeal. The breakfast my mom always made for me, and was actually the very first thing that she ever taught me how to make, was trứng ốp la (fried egg). It is so incredibly simple to make, requires just a couple of ingredients,

Ingredients
Quantities are shown as originally provided.
- 1 french baguette
- 2 eggs
- 1 tbsp butter
- 1/2 small shallot
- 2 tsp Maggi seasoning
- Salt and pepper to taste
- 1 tbsp Kewpie mayo
- Sliced cucumber
- 1/4 cup pickled veggie
- Cilantro
Instructions

To a fry pan on medium-high, add butter and thinly sliced shallots.

Fry two eggs in the pan, making sure the yolks are still runny

Assemble the baguette by adding kewpie mayo, eggs, and garnishes
