Ingredients

Quantities are shown as originally provided.

  • 1 medium apple (sliced thin)
  • 1 tsp coconut oil or unsalted butter (melted)
  • 1 tsp cinnamon
  • 1 tsp granulated stevia or your preferred zero-sugar sweetener (adjust to taste)
  • 2/3 cup plain low-fat Greek yogurt
  • ½ cup high protein, high fiber granola
  • Optional toppings: chopped nuts, walnuts, pecans, chia seeds, or a sprinkle of cinnamon

Instructions

  1. 1

Place the sliced apple in a microwave-safe bowl. Add the coconut oil or butter, cinnamon, and stevia. Stir to coat evenly. Cover loosely with a microwave-safe lid or plate. Microwave on high for 2–3 minutes, stirring halfway, until the apples are tender but still slightly firm. Let cool slightly.

  2. 2

In a glass or jar, layer half of the granola at the bottom. Add a layer of Greek yogurt (~½ cup). Top with half of the cooked cinnamon apples. Repeat layers with remaining granola, yogurt, and apples.

  3. 3

Add optional toppings if desired: nuts, chia seeds, or extra cinnamon for garnish.

  4. 4

Serve immediately. Best enjoyed fresh to keep the granola crunchy.
