- 2 tablespoons peanut oil
- 3 carrots
- 2 inches broccoli heads
- 2 bunches scallions
- 3 garlic cloves
- 1 cup parmigiano-reggiano
- 1 container grape tomatoes

Bring a large pot of water to boil

Clean and slice the carrots into thin rounds

Cut the broccoli into small florets

Roughly dice the stalks

Thinly slice the green onions

Heat the peanut oil in a skillet over medium-high heat

Add minced garlic and saute for about 30 seconds
