Pork Floss Breakfast Sandwich - Quick and Easy

- 3 slices bread (any kind is fine)
- 1/4 cup pork floss or pork sung 肉松
- 1 large egg
- beaten
- ~2 tablespoons mayo
- 1 tablespoon vegetable oil

Toast the 3 bread slices slightly in a toaster oven.

Heat a well-seasoned cast iron pan or nonstick skillet under medium heat. Add 1 tablespoon of vegetable oil, swirling the oil around for a bit. When the oil is warm, pour the beaten egg into the pan, spreading it a bit with a spatula to form a thin layer. When the egg solidifies, use a spatula to transfer it out to a plate. Cut it into two pieces.

Spread a thin layer of mayo with a bread knife onto one slice of bread. Then spread some pork floss on top of the mayo, gently flattening the pork floss with the bread knife. Arrange one piece of the cooked egg sheet on top of the pork sung.

Spread another thin layer of mayo on to a second slice of bread. Put the second slice of bread on top of the egg sheet with the mayo side down. Then spread more mayo on the top side of the bread slice. Add the remaining pork sung and egg sheet as in step 3. Add mayo to the last slice of bread and place it face down on the egg. Cut the sandwich into two pieces and enjoy!
