Vegetable Fried Rice

- 4 C cooked rice (day-old, chilled)
- 1 1/2 C broccoli florets (cut into bite-sized pieces)
- 4 large eggs (beaten)
- 1 Tbsp vegetable oil (plus more as needed)
- 1 small carrot (grated)
- 1 small yellow onion (minced)
- 1 Tsp kosher salt (to taste)
- 1 Tsp ground ginger
- 2 Tbsp garlic butter
- 4 scallions (chopped)
- 3 Tbsp soy sauce
- 1 Tbsp sesame oil
- 1/2 Tsp red pepper flakes
- 1/4 Tsp sesame seeds (toasted)
- 1/2 Tsp black pepper (freshly cracked, to taste)

It’s best to cook your rice the night before and chill it in the fridge. Cold rice makes the best fried rice, so plan ahead for this step.

Start by steaming your broccoli until it’s a vibrant green—this should take about 4 minutes. You can do this in the microwave or on the stove, whatever you’re more comfortable with. Set it aside once done.

In a small bowl, crack your eggs, add a pinch of salt, and whisk them until there are no streaks. This will help the eggs cook evenly. Set them aside for now.

Grab a wok or a large frying pan and place it over medium-high heat. Let the pan get hot, then drizzle in some vegetable oil. You want the oil to be hot before you add anything else.

Toss in your grated carrot and minced yellow onion. Add a pinch of salt and the ground ginger at this stage. Stir everything together, letting the carrots soften and the onion start to brown. This will take just a few minutes.

Once the carrots and onions are ready, add the steamed broccoli. Give it a good stir to mix everything together, then remove the veggies to a large bowl and set them aside for now.

Turn the heat down to medium and add a little more oil if the pan looks dry. Pour in your scrambled eggs and stir them with a silicone spatula. Cook the eggs just until they’re set but still soft—about 2-3 minutes.

Push the cooked eggs to one side of the pan, then add half of the garlic butter to the empty side. Once the butter melts, add the chopped green onions and stir everything together—eggs, butter, and onions.

Now, add your cold cooked rice to the pan. Stir everything together to combine, making sure the rice gets coated with the flavors in the pan. Pour in the soy sauce and sesame oil, and keep stirring until the rice is evenly coated.

Toss the cooked veggies back into the pan, along with the remaining garlic butter, red pepper flakes, and toasted sesame seeds. Give everything a final stir to mix well.

This is the point where you taste your fried rice and adjust the seasoning. Add more salt or pepper if needed. Once you’re happy with the taste, it’s ready to serve. Dassit!
