Ingredients

Quantities are shown as originally provided.

  • 6 oz turkey meat, shredded, or sliced into 2 inch pieces. Use all parts of the turkey, like dark or white meat and some skin is ok too.
  • 5 oz dried glass noodles. Soak in hot or warm water to soften before cooking.
  • 1 tablespoon garlic, minced
  • 1/2 tablespoon lime juice
  • 3 tablespoons oyster sauce
  • 1/2 tablespoon soy sauce
  • 1/2 tablespoon fish sauce. Go light, can add more later at the end if need more.
  • 1 tablespoon dark soy sauce. For the added brown color to the noodles. Molasses work great as a substitute.
  • 1/2 tablespoon ground white pepper
  • 1 1/2 tablespoon sugar
  • 1/2 cup carrot, sliced into 1 inch pieces or use carrot chips.
  • 1/2 cup onion, sliced into 1 inch pieces
  • 1/2 cup  pea pods.
  • 1 cup cabbage.
  • 2 tablespoon oil. Vegetable, canola, coconut, or avocado oil works great.

Instructions

    Soak the dry noodles in hot water for 5 minutes, drain, and set aside.

    Mix the sauce in a small bowl by mixing oyster, soy, dark soy, fish sauce, sugar, lime juice and white pepper. Set aside.

    Heat a large pan on medium-high heat. Add oil. Once hot, add garlic and onion. Sauteed until lightly browned. Then add carrots and turkey meat, and cook for 2 minutes.

    Add cabbage and pea pods, stir, and cook for one minute or until the vegetables are tender.

    Add the glass noodles and cook for about 2 minutes until the noodles are soft. Stir often to mix all the ingredients.

    Add the sauce, stir well and cook for 1-2 more minutes. Taste and adjust with more soy sauce, sugar, lime juice, or white peppers! Done!
