Ingredients

- 1 1/4 cups all-purpose flour
- 2 tablespoons granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 eggs
- 2 cups buttermilk
- 1 cup vegetable oil (for frying)

In a large mixing bowl, whisk together 1 1/4 cups all-purpose flour, 2 tablespoons granulated sugar, 2 teaspoons baking powder, and 1/2 teaspoon salt.

Pour in 2 eggs and 2 cups buttermilk and mix until the batter is mostly smooth.

Heat a skillet over medium to medium-high heat. Add enough of 1 cup vegetable oil to just barely cover the bottom of the pan and let it heat. Adjust the heat as needed so the pancakes stay a nice golden brown.

Working in batches of 3 to 4, ladle about 1 tablespoon of batter at a time into the hot skillet. Fry until golden brown, flip, and cook the other side until equally golden.

Transfer the fried pancakes to a paper-towel-lined plate. Serve hot with jam, sour cream, or fresh berries.
