Ingredients
Quantities are shown as originally provided.
- 1¼ tbsp margarine
- 1 tbsp sugar
- 1 tbsp boiling water
- 1-2 drops vanilla essence
- 50 g desiccated coconut ((approx. ½ cup))
- 45 g dark chocolate ((approx. 1⅔ oz))
- 75 g dark chocolate ((approx. 2⅔ oz))
Instructions
- 1
Melt the margarine in a bowl large enough to hold all the ingredients.
- 2
Dissolve the sugar in the boiling water, then add to the margarine with the vanilla essence.
- 3
Stir in the coconut, mix well, and leave to stand for 5-10 minutes, so that the coconut can absorb the liquid.
- 4
Meanwhile, melt the 45g dark chocolate. Mix this thoroughly into the coconut mixture till well blended. Put in the fridge for a few minutes to firm up.
- 5
Line a plate or cookie sheet with baking parchment. Divide the coconut mixture into 8 and roll into balls. Place on the parchment and put the plate into the freezer for 10-15 minutes for the balls to harden.
- 6
Melt the 75g chocolate for the coating. Remove the balls from the freezer and using a fork and spoon, turn each one in the chocolate to coat before returning it to the baking parchment.
- 7
Once all the balls are coated in chocolate, return them to the freezer or fridge to set.
- 8
Store in the fridge until ready to serve. YUM.
