Beef Fried Rice

Ingredients

- 1 tablespoon canola oil
- ½ tablespoon finely chopped chili
- ½ tablespoon finely chopped garlic
- ½ cup diced carrot
- 5 cups steamed jasmine rice
- 2 eggs (beaten)
- 3.52 ounces fried dried beef or beef jerky (cut into small pieces)
- 4 tablespoons soy sauce
- 2 green onions (chopped)

Add the canola oil to a wok over medium heat and fry the chilis, garlic and carrot. (There is no need to wait for the oil to be hot or the chili and garlic will burn).

Once the carrot is cooked, add rice and stir until everything is mixed together.

Pour the eggs over the rice and quickly stir and toss until each grain is coated in egg.

Add the fried dried beef or beef jerky and season the fried rice with soy sauce.

Turn the heat off and add the green onions. Stir to mix the green onions with the rice.

Serve warm with lime wedges and squeeze the lime over the rice and mix to enjoy.
