Ingredients

  • 4 large garlic cloves
  • 1/4 cup coriander root or stems (cilantro)
  • 1/2 tsp ground white pepper
  • 1/2 the Sam Gler paste (above)
  • 30-40 wonton wrappers. Store leftover wonton wraps in a ziplock bag to keep them fresh.
  • 1/2 lb ground pork
  • 1 stalk green onion, chopped into very small pieces
  • 1 tbsp oyster sauce
  • 1/2 tbsp sauce sauce
  • 1+1/2 tbsp tapioca starch
  • 1 egg
  • 1/2 tsp salt
  • 1/2 the Sam Gler paste (above)
  • 1 tbsp soy sauce
  • 1 tsp salt
  • 1+1/2 tsp sugar. Palm or brown sugar will work.
  • Baby bok choy, cut into halves or small bite-size pieces.

    3A. Start by preparing your work surface like a cutting board or a flat platter. Have a small bowl of water nearby to wet the wrapper's edges.

    3B. Lay one dumpling wrapper on a smooth surface. Scoop half a tablespoon of the wonton filling onto the middle of the wrapper. Next, Use your fingers to wet the edges of the wrapper, then fold it in half to form a triangle. See picture.

    3C. Next, pick up your wonton with the triangle point facing down towards you and bring the top two edges together, folding them on each other. The wet edges will stick together naturally. Dabb more water if needed.

    3D. Make sure to squeeze out any air pockets. Voila! You've created a boat-shaped wonton! Repeat these steps until you've used up all the filling. Set them aside for cooking later.
