Ingredients

Quantities are shown as originally provided.

  • 6 falafel
  • 1 cup hummus (homemade hummus or prepared hummus)
  • 1 cup vegetable salad (tomato-cucumber, dressed lettuces, etc.)
  • 2 tablespoons fresh herbs (parsley, cilantro, mint, or basil)
  • 1/4 cup yogurt (Greek yogurt or labneh)
  • 1 cup thinly sliced cucumbers
  • 1 cup cherry tomatoes (halved)
  • 1/4 cup turnip pickles
  • 1/4 cup olives (kalamata, green, etc.)
  • 1 cup cooked grains (rice, brown rice, bulgur, couscous, etc.)
  • 1/4 cup sliced radishes
  • 2 tablespoons extra virgin olive oil
  • 1/4 cup tahini sauce (see my tahini sauce recipe)

Instructions

    Prepare the falafel by making homemade falafel or purchasing prepared falafel. The fresher the better! These bowls taste best with falafel that has just been fried and is still warm!

    Use two flat, wide bowls. Start with a base of hummus, any salads, cooked grains, dividing them evenly between the bowls. Drizzle the hummus and anything else with olive oil.

    Layer in fresh vegetables and garnishes, then top with your crispy falafel, and equal amount in each bowl.

    Garnish with fresh herbs and drizzle with tahini sauce. Serve immediately.
