Ingredients

- 1 lb salmon
- ½ tsp salt
- ¼ tsp five spice powder
- 2 tbsp fish sauce
- 2 tbsp soy sauce (see note 1)
- 2 tbsp rice wine vinegar
- 4 tsp light brown sugar (see note 2)
- 3 cloves garlic (minced)
- 1 tbsp olive oil (see note 3)
Instructions
- 1
Preheat the oven to 400 degrees F (204 degrees C).
- 2
Make the marinade. Combine salt, five spice powder, fish sauce, rice wine vinegar, soy sauce, brown sugar, garlic, and olive oil into a small bowl. Whisk together and set aside.
- 3
Add the salmon to the Ziploc bag. Pour the marinade over the top. Shake the bag a few times to coat the salmon in the marinade. Let the salmon marinate for 15 minutes.
- 4
Once done marinating, place the salmon skin side down on a baking sheet. Reserve the marinade for later. Bake in the oven for 15-20 minutes until cooked through.
- 5
While the salmon is baking, make the sauce. Pour the reserved marinade into a sauce pan and heat over high heat until the edges start to bubble (30 seconds to 1 minute). Pour sauce through a fine mesh sieve into a small bowl. Set aside.
- 6
Once done baking, drizzle the sauce over the top. Serve over a bed of rice and roasted vegetables.
