- 120 grams unsalted butter, (room temperature)
- 40 grams icing sugar, (sifted)
- 1/2 teaspoon vanilla extract
- 80 grams tapioca starch
- 50 grams brown rice flour
- 20 grams blanched almond flour
- 4 teaspoons ground ginger
- 1/4 teaspoon cinnamon

Preheat oven 325F/165C.

In a mixing bowl, combine the room temperature unsalted butter and icing sugar. Using a whisk to mix until well-blended and fluffy. Whisk in the vanilla extract.

In a bowl, combine the tapioca starch, brown rice flour, almond flour, ground ginger, and cinnamon. Whisk together.

Add the dry ingredients to the butter mixture and mix with a spoon or rubber spatula until a cohesive dough forms.

Scoop out the cookie dough into 20 gram portions and use your hands press the dough together and roll into a ball. Place them on a parchment-lined baking sheet.

Flatten each ball with a fork or the bottom of a glass. Bake for 14 minutes.
