A favorite childhood Lao snack that was always given out at temple. This is khao tom, a coconut sticky rice banana parcel. Make sure to let these cool for at least 1 hour so it creates that delicious chewy texture.

Ingredients

  • 13.5 fl oz can coconut milk
  • ¾ cup sugar
  • ½ tsp salt
  • 2 cups sticky rice, uncooked
  • 6 ripe baby bananas
  • 12 banana leaves, 12”x12”

Instructions

    Cook sticky rice with your preferred method

    In a pot on medium low heat, add coconut milk, sugar, and salt then let it simmer for 2-4 mins

  3. 3

    Turn off the heat and add the sticky rice into the sauce and let it soak up the liquid. Scoop out the rice mixture into a bowl and let it cool.

    Prepare banana leaves, then scoop ⅓ cup of the rice mixture on the bottom of the leaf closest to you and add half of the baby banana on top. Roll it away from you to wrap it closed then tuck both sides inwards

    Steam for 30 mins

    Let it cool for at least 1 hour
