- 1 Lb baby red potatoes (thinly sliced)
- 1 Tsp seasoned salt (to taste)
- 1/2 Tsp garlic powder
- 1/2 Tsp paprika
- 1/4 Tsp black pepper (freshly cracked)
- 1 Tbsp all-purpose flour
- 1 Tsp vegetable oil
- 1 Tbsp salted butter
- 1 small yellow onion (thinly sliced)
- 1 medium bell pepper (diced)
- 1/4 C water

In a large mixing bowl, toss the thinly sliced potatoes with the seasoned salt, garlic powder, paprika, black pepper, and flour. Once the potatoes are well-coated, add the vegetable oil and stir again to evenly distribute.

Preheat a large sauté pan over medium-high heat for 2 minutes, then add the butter. Once melted, add the sliced onion and diced bell pepper. Toss to coat in the butter, spread into a single layer, and cook undisturbed for 5 minutes.

Pour the seasoned potatoes into the pan. Gently fold everything together, ensuring the peppers and onions are evenly mixed with the potatoes. Spread them out into a single layer and fry for 3 minutes, then flip, spread out again, and fry for another 3 minutes.

Pour in the water and cover with the lid. Reduce the heat to low and let the potatoes steam until the water is absorbed and the potatoes are tender, about 10 minutes.

Remove the lid and increase the heat to medium-high. Gently flip the potatoes, spread them back out, and cook until they’re deeply browned and crisped around the edges, turning every 3-4 minutes until you’re satisfied with the texture.
