30-Minute Ga Kho (Vietnamese Caramelized Chicken)
This easy, homemade ga kho or Vietnamese caramelized chicken is one of the best recipes to make on a weeknight. It only has 8 ingredients and takes less than an hour to make!

Ingredients
Quantities are shown as originally provided.
- 1 shallot (minced, medium size)
- ¾ oz ginger (thinly sliced)
- 3 cloves garlic (minced)
- 2 tbsp light brown sugar
- 1 ½ lb chicken thighs (cut into 1 inch cubes)
- 2 tbsp fish sauce
- 1 tsp pepper
- 1 tbsp cilantro (for garnish, optional, minced)

Saute 1 minced shallot and ¾ oz of ginger with 1 tbsp of oil until brown. Pour both onto a plate and set aside.

Using the same pan, heat 1 tbsp of oil over medium high heat. Add 3 cloves of minced garlic and 2 tbsp of light brown sugar and cook until the sugar melts.

Next, add the 1 ½ lb of chicken thighs and coat with the brown sugar mixture. Cook until chicken is brown on all sides (3-5 minutes).

Lastly, add 2 tbsp of fish sauce and 1 tsp of pepper. Stir to coat. Lower heat to medium low. Cover and simmer for 10 minutes.

Add back the sautéed shallots and ginger from step 1. Garnish with 1 tbsp of minced cilantro and serve!
