  • 2¼ cups (280 g) all-purpose flour
  • 1 teaspoon (5 g) salt
  • 2 large eggs
  • ½ to 1 cup (120–240 ml) water, as needed
  • Fresh parsley, for garnish

Instructions

    In a large bowl, mix flour and salt. Add eggs and stir well. Gradually add enough water to form a smooth, firm batter. Let rest for 10 minutes.

    Bring a large pot of salted water to a boil while the batter rests.

    Push the batter through a Spätzle maker directly into the boiling water. The noodles will float to the top when done, usually after a few minutes.

    Remove cooked Spätzle with a slotted spoon and transfer to a colander to drain excess water.

    Serve plain or sauté in butter. Optional: top with crispy bacon, fried onions, or fresh parsley.
