Lao Laab Stuffing
Create a Lao-style stuffing infused with traditional flavors like toasted sticky rice powder, green onions, cilantro, and more. - ¾ cup butter
- 6 garlic cloves, minced
- 1 yellow onion, finely diced
- 1 cup shiitake mushrooms, diced
- 1 cup kabocha squash, diced
- 3 stalks celery, finely diced
- 2 tbsp Lao laab seasoning
- 1.5 baguettes (21” long), day-old, cut into cubes
- ½ cup green onions, diced
- ½ cup cilantro, diced
- 2 cups chicken broth
- Salt and pepper to taste

In a large pan, melt butter, sauté garlic briefly, then add onions. Cook until translucent (3-4 mins), then add shiitake and cook briefly. Add kabocha, celery, and cook until soft (about 5 mins). Season with Lao laab blend.

In a large bowl, combine cubed bread, green onions, cilantro, and veggie mixture. Toss well.

Slowly add chicken broth until cubes are lightly coated. Season with salt, pepper, and more Lao laab if desired.

Place in a pan and bake at 350°F, covered with foil, for 30 mins, then uncovered for 15 mins. Enjoy your flavorful Lao-style stuffing!
