Ingredients
Quantities are shown as originally provided.
- 1 1/2 tablespoon cooking oil
- 1 1/2 lbs (750g) boneless and skinless chicken thighs
- 2 1/2 tablespoons soy sauce
- 1/2 cup mirin
- 1 1/2 tablespoons sugar
- 1 tablespoon water (mix well)
- 1 tsp cornstarch
- white sesame seeds (for garnishing, optional)
Instructions
- 1
Turn on the Sauté mode on your Instant Pot. Once the pot is fully heated (to prevent the chicken from sticking), add the cooking oil.
- 2
Pan-sear the chicken thighs until they turn slightly brown on the surface. (If they stick to the pot too much, you can use a non-stick skillet for searing or skip this step.)
- 3
Add the soy sauce, mirin, and sugar. Cover the pot, select Manual, and set it to High Pressure for 6 minutes.
- 4
When it beeps, perform a quick release. Once the valve drops, carefully remove the cover. Set the Instant Pot to Sauté mode, then add the cornstarch slurry and stir to thicken the sauce.
- 5
Turn off the heat, garnish the chicken with sesame seeds (if using), and serve immediately with steamed rice.
