Seriously Amazing Chocolate Tart

I wanted to share this chocolate tart recipe because it really is seriously amazing. It's a rich, deeply, densely chocolatey but not super sweet, smooth, creamy, just firm enough to hold itself together chocolate tart of the most divine sort.

Ingredients

Quantities are shown as originally provided.

  • 2 cups chocolate graham animal crackers, finely ground, 170g
  • 8 tbsp melted butter, cooled, 113g
  • 1/4 cup caster sugar, 56g
  • 2 cups heavy cream, 480 ml
  • 14.5 oz 70% chocolate, 435 g
  • 3 eggs
  • 1 1/2 tsp vanilla extract
  • 1/2 tsp salt

Instructions

  1. 1

Grind your crackers as finely as possible.

  2. 2

Mix together sugar, ground crackers and 5 tbsp of melted butter. Add the rest of the butter in tbsp increments until the mixture is wet enough to stick together easily when pressed.

  3. 3

Use fingers to press evenly and firmly into your tart pan, from bottom then up the sides.

  4. 4

Bake 10 mins. Let crust cool completely.

  5. 5

    Chop up chocolate roughly.

  6. 6

Heat cream in small pot until just boiled, then pour over the chocolate. Let stand for 5 mins, then stir until smooth.

  7. 7

Whisk eggs, vanilla and salt in another bowl, then stir into the chocolate all at once.

  8. 8

Pour into cooled crust, being sure not to over fill the crust as you still must get it into the oven without spilling.

  9. 9

Bake approx 20 mins, or until the chocolate center sets 3 inch from the edge, the center will quiver when you shake the tart pan.

  10. 10

Remove from oven. Let cool in pan for 1 hour.

  11. 11

Dust with icing sugar just before serving.
