Honey Butter Smashed Potatoes

  • 1 lb baby yukon gold potatoes
  • 4 Tbsp unsalted butter
  • 4 Tbsp honey
  • 1 tsp salt
  • Your favorite herb, optional (thyme, rosemary, sage, parsley and etc…)

Instructions

    Place potatoes into a large pot and pour enough cold water to cover the potatoes. Add generous amount of salt and bring it to boil. Reduce heat to medium high and cook the potatoes until fork tender. Rinse under cold water, drain

    Smash the potatoes gently with your palm or a large spoon. Don’t smash them until it lose the form, make sure you can lift up potatoes without breaking down.

    Heat a large cast iron pan over medium heat then add butter, honey, salt and herb if you are using any. Mix well.

    When the honey butter is simmering, place smashed potatoes carefully. Increase heat to medium high then sear first side of potatoes for 5 to 7 minutes or until golden brown. Then flip it over. Cook another 5 to 7 minutes.

    Sprinkle with extra herbs or black pepper to your taste. Enjoy!
