  • 1 ripe banana
  • 2 eggs
  • 1/2 cup BC Frozen Blueberries

Instructions

    Mash a large banana in a large mixing bowl.

    Add the eggs to the banana mixture. Feel free to fold in rolls oats or chia seeds if you are looking to bulk up this 3-ingredient vegan pancake some more.

    Add vegetable oil to a nonstick skillet over medium heat. For best results, ensure the heat isn't too high so the pancakes will burn.

    Add the pancake batter and blueberries to the non-stick skillet and cook for 2 minutes or until golden brown. Flipping halfway. Repeat with the remaining batter.
