Filipino Street-Style Fried Chicken

Ingredients
Quantities are shown as originally provided.
- 1 kg bone-in, skin-on, chicken quarters
- Neutral oil, for deep frying (vegetable, canola, or peanut can work)
- 2 tbsp corn starch
- 1 tbsp flour
- 1 tbsp calamansi juice (may also use lemon or lime juice)
- 1 large egg white
- 2 tsp fish sauce
- 2 tsp kosher salt
- 2 tsp garlic powder
- 1 tsp onion powder
- 1 tsp liquid seasoning (may also use soy sauce)
- 1 tsp sugar
- 1/2 tsp ground black pepper
- 1 cup cornstarch
- 1/4 cup flour
- 1/2 tsp annatto powder
- 1/2 tsp baking powder

Prepare your chicken by cutting shallow slits on the meat. Set aside.

In a large bowl, combine together all the ingredients for the marinade. Mix well to achieve a thin, paint-like batter consistency.

Mix in your prepared chicken, and ensure each piece is coated well with the marinade. Cover, and let marinate for at least 1 hour to overnight.

In the meantime, combine all the ingredients together for the coating. Stir well to combine. Coat the marinated chicken pieces in the coating mix, packing it well to ensure maximum coverage.

Fry the coated chicken pieces in batches until the outside is golden and cooked all the way through 1. Set aside to cool on a wire rack

Let cool slightly prior to serving. Enjoy with sawsawan as a dip, if desired.
