Ingredients
- 400 g Okra (Bhindi, washed and dried)
- 2 Onions (thinly sliced)
- 2 Tomatoes (chopped)
- 2 Green Chillies (finely chopped)
- 1 tsp Cumin Seeds
- 1 tsp Turmeric Powder
- 1 tsp Chilli Powder
- 1 tsp Coriander Powder
- 1 tsp Garam Masala
- 2 tbsp Vegetable Oil
- Salt (to taste)
- Coriander (for garnish)

Heat vegetable oil in a pan over medium heat. Add cumin seeds and let them splutter.

Add thinly sliced onions and sauté until they turn golden brown.

Add chopped tomatoes and cook until they soften.

Now, add chopped green chillies, turmeric powder, red chilli powder, coriander powder, and salt. Mix well and cook for a couple of minutes.

Add washed and dried okra (bhindi) to the pan. Stir well to coat the okra with the spice mixture.

Cover the pan and cook for about 15-20 minutes, stirring occasionally, until the okra is tender.

Once the okra is cooked, sprinkle garam masala and mix gently.

Garnish with fresh coriander leaves and serve hot with roti or rice.
